SALE - La “Via del Sale” ci riporta ad epoche remote, all’era del bronzo, epoca nella quale gli uomini appresero le tecniche dell’evaporazione delle acque marine per la raccolta del sale, al Medio Evo, al Rinascimento… il Sale è sempre stato indispensabile per la conservazione degli alimenti e rappresenta da sempre la ricchezza principale delle popolazioni imprigionate in regioni geograficamente isolate, usato come moneta di scambio per ottenere cereali, elementi base dell’alimentazione…                                                    
Il “Fleur de Sel” è la primissima scelta del sale marino, quello che si forma, cristallizzando, dall’evaporazione dell’acqua in superficie.
La quantità è molto limitata e questo spiega il costo molto elevato del “Fior di Sale”. Quello di alcune località dell’Atlantico è particolarmente pregiato: in Francia Guérande, Nearmoutiers, Camargue, in Portogallo, Algarve.
Con il Fleur de Sel, abbiamo creato alcuni tipi di Sale Gourmet: i Sali fioriti”,che contengono alcuni tipi di Spezie e fiori per creare un effetto “Bello” oltre che buono.
L’uso?  quello del Sale Gourmet, da portare in tavola e usare all’ultimo sui cibi… una bistecca o un pesce presentati con una spolverata di Sale ricco di petali di fiori blu… o con petali di rosa rossa e peperoncino…

“Flower of Salt ("Fleur de Sel "in French) is a hand-harvested sea salt collected by workers who scrape only the top layer of salt before it sinks to the bottom of large salt pans. Traditional French  Fleur de Sel is collected off the coast of Brittany (most notably in the towns of Guérande - Noirmoutier, and also Camargue). In Portugal "Flor de Sal" came especially from Algarve.
Fleur de Sel is one of the more expensive salts. Due to the small size of the crystals, it dissolves faster than regular salt. Hence it is best used similarly to fresh herbs, sprinkling it onto food just before serving. The salt, with its coarse crystals, is a finishing salt for the distinct, delicate flavour it leaves on the palate. Fleur de Sel has higher concentrates of calcium, magnesium and iron.”
